Lime Salt
When my friend Big Dave says…”LISTEN MAN” he either is trying to tell you something really important…or he is trying to emphasize how awesome he thinks something is…..so this recipe is both important and awesome, this recipe is a life changer. I mean….I don’t mean to humble-brag…but this recipe for Lime Salt can bring families closer, it can bridge gaps, it might even pave the way for world peace…….Really…….
Listen man……., just do yourself a favor, make this recipe, and give it to friends and family. Buy some shaker bottles on Amazon and have your kids make this recipe for Christmas gifts, Birthday gifts, Random Gifts, whatever, just spread this recipe around……it is easy and obvious and just worth the effort.
So…… there is a food truck that rocks around my town and does Tacos. And not just your traditional Mexican Tacos…they do Greek Tacos, Korean Tacos, Filipino Tacos, Plain Ole Tacos (which are VERY not plain nor old). Anyway they make amazing food…in fact, this truck is so badass that he can’t just be a food truck, he has a waiting list for catering events…….I try to book him for company events or parties…but his list is long…and *distinguished*. Anyway…he is the inventor\innovator and King of my Lime Salt recipe. He makes homemade corn tortillas (almost as good as mine…..just sayin, check my recipe here), fries them into perfect chips, and sprinkles them with his badass Lime Salt. I will tell you this….they (not him)…..but people call them Crack Chips…..Cause they will get you hooked…..people keep coming back….he can’t stop the chip addiction. It is something that I have never been part of….walking back to the food truck, slightly embarrassed, hat in hand, asking if I can have more chips…I mean…they are not on the menu…so you cant just buy them…..he does not have a “Chips” item on the menu…….. So you just have to go to the window with your money in hand and hope he gives you some more Crack Chips…….
Anyway, enough of my “Chip Drama”…you can make these…he told me his secret after tequila was introduced. Super easy. You need a Zester…and a mortar and pestle. If you don’t have either of these you can make it work with a pairing knife and a decent metal bowl. Really, try using this salt on anything, it is so worthwhile. I use my lime salt on popcorn, roast chicken, lamb, steaks, grilled veggies, soups, …….really…. I am letting you in on my secret thing here.
I hope you find this as easy and as awesome I do….
- It does not get any easier than this…..Preheat your oven to 215-225 degrees.
- Get your zester out and zest one lime, zest all the “green” on that lime…top and bottom, side to side …Don’t zest so much that you get into the
“white” part of the skin…it can be pretty bitter.- Pro-Tip….use the left over lime for tequila shots or to dress your tacos……
- Add your zest to 1\2 cup of sea salt.
- Use your mortar and pestle and really work the zest into the salt…grind and work it for 2 mins or so…. (if you don’t have a mortar and pestle you can combine in a sturdy bowl and work with a spoon…the idea is to work it in…)
- Spread salt mixture thin on parchment paper with a flat pan\sheet pan and cook for about an hour and a half. (you can use a dehydrator if you would like…just dehydrate for twice the time or until the salt will crumble in your fingers).
- Let mixture cool, you may have to break up some pieces that stick together…
- All done…. Another Pro Tip—-give some out to friends and family——they will lose their minds…Tacos and popcorn will never be the same……
