Took a kayak fishing charter with Slow and Low Coastal Charters on October 8th out of Ed Waline Beach, just west of Grayton Beach.  Fished out of Hobie kayaks, trolled with Kingfish rigs and cigar minnows (both live and frozen, with a few blue runners mixed in).  I caught a handful of bonito, a few Spanish Mackerel, a King Mackerel, and a number of other hookups (including one big one that was taken by a really annoying dolphin).   (Article, recipe, and pictures by Kevin Collins)

Ended up with about 5-10 lbs of cleaned mackerel fillets.

Made Fish Tacos (corn & flour):

We soaked them in milk for a few hours.  We cut the bones and red meat out of the centerline of fish and chopped them into about 1-2 inch cubes.  We covered them in a salt, pepper, and bisquick (gluten free due to my son’s allergy) dredge and fried them up with some vegetable oil.  Served them up with asian coleslaw, lemon, and tartar sauce.
