Deviled Eggs

Deviled Eggs are a staple on college football Saturdays in my home.  Don’t worry…..I think it is 100% ok to make Deviled Eggs any time of the year.  I was making a big appetizer plate last week-end and decided to go back to the well and make a dozen Deviled Eggs…….they were gone in the first 30 minutes…I was only able to eat 3 before I had to go slum it up and eat smoked salmon, cheese, and pickles (I know…life is tough).

So print this recipe and save it for an easy addition to a lunch, dinner, appetizer, tailgate party, or just a snack.

 

What you need

  • 12 Eggs
  • ½ cup mayonnaise, I use ¼ cup for 6 eggs (Dukes Mayo…please)
  • 2 teaspoons of Yellow Mustard (use Dijon if you are into that kind of thing)
  • 1 teaspoon of white vinegar
  • 4 teaspoons of relish….Wickles..dill…sweet (see note below)
  • Salt, Pepper (to taste..don’t be shy!)
  • Smoked Paprika
  • Chopped or crumbled bacon for topping

Ok, here we go.  Arrange Eggs in a saucepan with enough water to cover the eggs (I usually have about an inch of water over the top of the eggs).  Boil until the eggs are hard boiled, I have an egg timer, if you don’t, some folks will boil for 2 minutes on high and remove from heat and let sit covered in the hot water for 15 minutes.

Rinse in cold water, crack egg shells, rinse again to get all the shell off the eggs, and dry with a towel.  Cut eggs in half lengthwise.  Take out the yolks and put them in a medium to large bowl (give yourself enough room to work).

Add the mayo, vinegar, salt, pepper, and mix together until smooth.  Next, we need to talk about relish. If you want to add relish….you will add it here and lightly mix . Ok, let me get on my soapbox about relish…  I use relish about half the time.  I like it….I like sweet relish, I like dill relish….I like anything pickled (see my pickle recipe….).  Do what makes you happy here.  If you are a relish fan…have at it.  If you like it spicy…you can add diced jalapenos instead of the relish (don’t add too much)…or you can meet in the middle and use a spicy relish…like Wickles….this is up to you.  If you just don’t like relish…or anything pickled…skip this step….you can always add a bit of relish to a few of your eggs at the end.

Next, you fill the egg whites with the mixture.  I use a table spoon and fill each one.  If you want to be super cool, you can fill a piping bag….or something like that and pipe it into the egg cups.

Lastly, I shake some smoked paprika over each one, and add crumbled bacon.

That is all there is……Sometimes I add a drop of Tabasco to each egg…..That is my style…I like it a bit spicy….Careful not to burn out your guests (or your family\kids).
